For the Dough

- 1 cup warm water (110Β°F / 43Β°C)
- 1 tsp sugar
- 2 Β½ cups all-purpose flour (plus extra for kneading)

- 1 cup vegan mozzarella (shredded)
- Β½ cup vegan ricotta (store-bought or homemade)
- 1 cup spinach, chopped
- Β½ cup mushrooms, sliced
- Β½ cup bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Β½ tsp salt
- ΒΌ tsp black pepper
- 2β3 tbsp tomato sauce or marinara

- 1β2 tbsp olive oil
- Optional: garlic powder or dried herbs

1. Make the dough
- In a small bowl, combine warm water, sugar, and yeast. Let sit 5β10 minutes until foamy.
- In a large bowl, mix flour and salt.
- Add yeast mixture and olive oil; stir until a soft dough forms.
- Knead on a floured surface 5β7 minutes until smooth.
- Place in a lightly oiled bowl, cover, and let rise 30 minutes until doubled in size.
2. Prepare the filling
- In a skillet, sautΓ© onion, garlic, mushrooms, and bell pepper in 1 tbsp olive oil for 3β5 minutes.
- Add spinach and cook until wilted.
- Remove from heat and let cool slightly.
- Mix in vegan mozzarella, ricotta, oregano, salt, and pepper.
3. Assemble the calzones
- Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment.
- Punch down dough and divide into 4 equal pieces.
- Roll each piece into a 6β8 inch circle.
- Spoon ΒΌ of the filling onto one half of each circle, leaving a Β½-inch border.
- Fold the dough over to cover filling and press edges with a fork to seal.
4. Bake the calzones
- Brush tops with olive oil (and optional garlic/herbs).
- Bake 20β25 minutes until golden brown.
- Remove from oven and let cool 5 minutes before serving.
