1. Make the crust
- Preheat oven to 350Β°F (175Β°C).
- Mix graham cracker crumbs, melted coconut oil, and maple syrup until combined.
- Press mixture evenly into a 9-inch pie pan.
- Bake 8β10 minutes, then let cool.
2. Make the chocolate filling
- In a small bowl, whisk cornstarch into ΒΌ cup coconut milk until smooth.
- In a saucepan, combine remaining coconut milk, chocolate chips, maple syrup, and salt. Heat over medium heat until chocolate is melted and mixture is smooth.
- Add cornstarch mixture to the saucepan and whisk continuously.
- Simmer gently 2β3 minutes until the filling thickens (it should coat the back of a spoon).
- Remove from heat and stir in vanilla extract.
3. Assemble the pie
- Pour chocolate filling into the cooled crust.
- Smooth the top with a spatula.
- Chill in the fridge 2β3 hours until fully set.
