- 2 cups cottage cheese
- 3 large eggs
- ½ cup unsweetened cocoa powder
- ½ cup maple syrup, honey, or other liquid sweetener
- ½ cup almond flour (or oat flour)
- 1 tsp vanilla extract
- 1 tsp baking powder
- ½ cup chocolate chips, divided
🔪 Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease an 8×8-inch baking dish or line it with parchment paper.
2. Blend the Cottage Cheese Base
In a blender or food processor, add:
- Cottage cheese
- Eggs
- Maple syrup/honey
- Vanilla extract
Blend until completely smooth and creamy, like a cheesecake batter.
(This step is the secret to making the bake fudgy and NOT curd-like.)
3. Mix Dry Ingredients
In a large mixing bowl, whisk together:
- Cocoa powder
- Almond (or oat) flour
- Baking powder
Break up any cocoa clumps for a smooth batter.
4. Combine Wet + Dry
Pour the blended cottage-cheese mixture into the bowl of dry ingredients.
Stir until fully combined — batter will be thick and brownie-like.
5. Add Chocolate Chips
Fold in ¼ cup of the chocolate chips.
Sprinkle the remaining ¼ cup on top.
6. Bake
Spread batter evenly into your prepared baking dish.
Bake for 28–35 minutes, depending on your oven.
- For fudgier texture: remove closer to 28 minutes.
- For cakier texture: bake toward 35 minutes.
The center should be just set but still soft.
7. Cool and Serve
Let cool for at least 10–15 minutes before slicing — it firms up beautifully as it cools.
Serve warm, room temp, or chilled (amazing like a brownie-cheesecake bar).
