🛒 Ingredients (4 servings)
For the caramelized onions
- 3 large yellow onions, thinly sliced
- 2–3 tbsp olive oil (or vegan butter)
- ½ tsp salt
- 1–2 tsp sugar (optional but helps caramelize)
- Splash of water as needed
For the creamy sauce
- 4 cloves garlic, minced
- 1 cup unsweetened plant milk (oat or almond work great)
- ½ cup vegetable broth
- ¼ cup nutritional yeast
- 2 tbsp vegan cream cheese or 3 tbsp cashew cream
- 1 tbsp miso paste (adds cheesy umami)
- 1 tbsp lemon juice
- ½ tsp smoked paprika (optional)
- ½ tsp black pepper
- Salt to taste
For the pasta
- 12 oz pasta (linguine, spaghetti, rigatoni, or short pasta)
- Pasta water (VERY important)
Finishing touches
- Fresh parsley or basil
- Chili flakes (optional)
- Extra nutritional yeast or vegan parmesan
🔪 Instructions
1. Caramelize the onions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions + salt.
- Cook 25–35 minutes, stirring occasionally, until deep golden brown.
- If they dry out, add a splash of water to deglaze.
- Add sugar halfway through (optional).
- Once caramelized, push onions to the side of the pan.
2. Make the sauce
- Add garlic to the open space in the pan; cook 1–2 minutes until fragrant.
- Add plant milk + vegetable broth.
- Whisk in nutritional yeast, vegan cream cheese, miso, lemon juice, paprika, pepper, and additional salt to taste.
- Simmer 5–7 minutes, stirring often, until slightly thickened.
- Stir the caramelized onions fully into the sauce.
3. Cook the pasta
- Boil pasta in salted water until al dente.
- Reserve 1 cup pasta water before draining.
4. Combine pasta + sauce
- Add cooked pasta directly into the onion sauce.
- Toss well, adding splashes of pasta water until silky and glossy.
- Taste and adjust salt, lemon, and pepper.
5. Serve
Top with:
- Fresh herbs
- Chili flakes
- More nutritional yeast or vegan parmesan
