🥥 Vegan Coconut Macaroons
Chewy • Sweet • Moist • Lightly Toasted • Gluten-Free
🛒 Ingredients (makes ~18 macaroons)
Dry Ingredients
- 3 cups unsweetened shredded coconut (fine shred recommended)
- ½ cup almond flour (adds chew & structure)
Wet Ingredients
- ½ cup maple syrup (or agave)
- ¼ cup coconut oil, melted
- ¼ cup coconut cream (thick part from a can of coconut milk)
- 1½ tsp vanilla extract
- ¼ tsp almond extract (optional but delicious)
- ¼ tsp salt
Optional Chocolate Coating
- ½–¾ cup melted vegan dark chocolate (for dipping or drizzling)
🔪 Instructions
1. Preheat the oven
- Set oven to 325°F (165°C).
- Line a baking sheet with parchment paper.
2. Mix the dry ingredients
In a large mixing bowl, combine:
- Shredded coconut
- Almond flour
Stir until evenly mixed.
3. Combine the wet ingredients
In a separate bowl, whisk together:
- Maple syrup
- Melted coconut oil
- Coconut cream
- Vanilla extract
- Almond extract
- Salt
Everything should be smooth and well blended.
4. Combine wet + dry
- Pour the wet mixture over the dry mixture.
- Stir until everything is completely moistened and sticky.
- If the mixture seems too dry, add a tbsp more coconut cream.
- If too wet, add 1–2 tbsp shredded coconut.
The mixture should hold together when pressed.
5. Shape the macaroons
- Use a tablespoon or small cookie scoop to scoop compact mounds.
- Press the mixture tightly so they won’t crumble.
- Place each mound on the lined baking sheet.
6. Bake
- Bake for 18–22 minutes, or until:
- bottoms are golden
- tops have light browning
Let cool completely on the tray — they firm up as they cool.
7. Optional Chocolate Dipping
- Melt vegan dark chocolate.
- Dip the bottoms or drizzle over the tops.
- Place on parchment and refrigerate 10–15 minutes until set.
