
🥒 Zucchini Air Fryer Fries
Ingredients:
- 2 medium zucchinis
- 1/2 cup breadcrumbs (panko for extra crunch)
- 1/4 cup grated Parmesan cheese (optional but tasty)
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 eggs (beaten)
- Olive oil spray (optional for extra crispiness)
🔪 Instructions:
- Prep zucchini:
Wash and cut zucchinis into fry-like sticks, about 3–4 inches long and ½ inch thick. - Set up dredging station:
- Bowl 1: Beaten eggs
- Bowl 2: Mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Coat the fries:
Dip each zucchini stick into the egg, then coat it in the breadcrumb mixture. Press lightly so it sticks well. - Arrange in air fryer:
Place the coated zucchini sticks in a single layer in the air fryer basket. Don’t overcrowd — work in batches if needed. - Air fry:
Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway through, until golden and crispy.
(Spray lightly with olive oil for extra crispiness.) - Serve:
Enjoy hot with a dip like ranch, marinara, or garlic aioli.

- For a low-carb version, use almond flour instead of breadcrumbs.
