πͺ Healthy Cookies β No Sugar! No Flour!
Ingredients:
- 3 ripe bananas, mashed
- 1/3 cup unsweetened applesauce
- 2 cups oats (rolled or quick oats)
- 1/4 cup almond milk (or any plant-based milk)
- 1/4 cup raisins or chopped nuts (your choice)
- 1 cup dark chocolate chunks (Lilyβs brand or any sugar-free/dark chocolate)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
Instructions:
- Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, mix mashed bananas and applesauce until smooth.
- Add the almond milk and vanilla extract, stirring to combine.
- Stir in oats, cinnamon, and raisins or nuts.
- Fold in the dark chocolate chunks evenly throughout the dough.
- Using a spoon, drop cookie-sized dollops onto the prepared baking sheet, flattening slightly with the back of the spoon.
- Bake for 15-18 minutes, or until the cookies are golden and set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Tips:
- For chewier cookies, slightly underbake and let them cool on the tray.
- Swap raisins for other dried fruits or seeds for variety.
- Store leftovers in an airtight container for up to 5 days.
