Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup unsweetened applesauce
  • 2 cups oats (rolled or quick oats)
  • 1/4 cup almond milk (or any plant-based milk)
  • 1/4 cup raisins or chopped nuts (your choice)
  • 1 cup dark chocolate chunks (Lily’s brand or any sugar-free/dark chocolate)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix mashed bananas and applesauce until smooth.
  3. Add the almond milk and vanilla extract, stirring to combine.
  4. Stir in oats, cinnamon, and raisins or nuts.
  5. Fold in the dark chocolate chunks evenly throughout the dough.
  6. Using a spoon, drop cookie-sized dollops onto the prepared baking sheet, flattening slightly with the back of the spoon.
  7. Bake for 15-18 minutes, or until the cookies are golden and set.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Tips:

  • For chewier cookies, slightly underbake and let them cool on the tray.
  • Swap raisins for other dried fruits or seeds for variety.
  • Store leftovers in an airtight container for up to 5 days.
