1 lb Italian sausage, cooked and drained
½ cup chopped pepperoni
4 oz cream cheese, softened
⅓ cup coconut flour
½ tsp baking powder
1 tsp minced garlic
1 tsp Italian seasoning
¼ cup chopped green bell pepper
2 tbsp chopped red onion
2 tbsp chopped black olives, patted dry
3 large eggs, beaten
1¼ cups shredded mozzarella
For the Topping:
1 tbsp melted butter
½ tsp Italian seasoning
Instructions
Preheat your oven to 350°F. Line a baking sheet with a silicone baking mat or grease it well.
In a large bowl, mix the cooked sausage and softened cream cheese until fully combined.
Add the remaining puff ingredients to the sausage mixture and mix everything until well combined.
Refrigerate the dough for 10 minutes. This is a crucial step that allows the coconut flour to absorb moisture, which prevents the puffs from flattening as they bake.
Using a small cookie scoop, drop rounded balls of dough onto the prepared baking sheet.
Bake for 18-20 minutes, or until the puffs are golden brown.
For an optional final touch, brush the tops of the hot pizza puffs with the melted butter and Italian seasoning mixture.
Serve warm with your favorite low-carb marinara sauce for dipping.
