These mini bites are soft, fluffy, and packed with cozy cinnamon-apple flavor and protein — perfect for a quick breakfast or snack on the go!
Ingredients:
½ cup (120g) cottage cheese
1 egg
1 small apple, peeled and finely chopped
¼ cup oat flour (or almond flour for low-carb)
½ teaspoon baking powder
½ teaspoon ground cinnamon
1–2 teaspoons maple syrup or honey (optional, for sweetness)
Pinch of salt

Directions:

Step 1: Prepare the Batter

In a blender or mixing bowl, combine cottage cheese, egg, oat flour, baking powder, cinnamon, maple syrup, and salt.

Blend or mix until smooth.

Gently fold in the chopped apple.

Step 2: Fill the Molds

Lightly grease a silicone mini muffin pan or use parchment liners.

Spoon the batter evenly into the molds, filling each about ¾ full.

Step 3: Cook (Air Fryer or Oven)

For Air Fryer:

Preheat to 300°F (150°C) if needed. Air fry for 10–12 minutes, or until golden and set.

For Oven:

Preheat to 350°F (175°C) and bake for 15–18 minutes, or until a toothpick comes out clean.

Let them cool for a few minutes before removing from the molds.

Prep Time: 5 minutes | Cook Time: 12–18 minutes

Total Time: 20 minutes

Kcal: About 35–45 kcal per bite (approx.)

Servings: 10–12 bites

Tips:

Add a few raisins or chopped walnuts for extra texture.
