


Italian Sausage with Peppers and Onions
Ingredients:
- 1 lb Italian sausage links (sweet, mild, or hot – your choice)
- 2 tbsp olive oil
- 1 large onion, sliced
- 2 bell peppers, sliced (mix of red, yellow, or green for color)
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt & pepper, to taste
- 1/4 cup water or chicken broth
- Optional: crushed red pepper flakes, for heat
Instructions:
- Brown the Sausages:
- In a large skillet over medium heat, add 1 tbsp olive oil.
- Add the sausage links and cook until browned on all sides (about 7–8 minutes). They don’t need to be fully cooked yet.
- Remove and set aside.
- Sauté the Peppers and Onions:
- In the same skillet, add another tbsp olive oil.
- Add the sliced onions and peppers. Cook for 5–7 minutes until softened.
- Add the garlic, oregano, basil, salt, and pepper. Cook for 1 minute more.
- Simmer Together:
- Slice the sausages into 1-inch pieces (or keep whole if you prefer) and return to the skillet.
- Add 1/4 cup of water or broth.
- Cover and simmer on low for 10–12 minutes, until sausages are fully cooked and flavors meld.
- Serve It Up:
- Serve over hoagie rolls, pasta, rice, or even on its own.
- Optional: top with melted provolone or mozzarella if making sandwiches.
Tips & Variations:
- Want it saucier? Add 1/2 cup of marinara sauce while simmering.
- Doing it for a crowd? Bake it in the oven: layer browned sausages, sautéed peppers/onions, and a bit of sauce in a baking dish. Cover and bake at 375°F (190°C) for 25–30 minutes.
- Works great with chicken sausage or plant-based sausage too!
