Italian Sausage with Peppers and Onions

Ingredients:

  • 1 lb Italian sausage links (sweet, mild, or hot – your choice)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2 bell peppers, sliced (mix of red, yellow, or green for color)
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt & pepper, to taste
  • 1/4 cup water or chicken broth
  • Optional: crushed red pepper flakes, for heat

Instructions:

  1. Brown the Sausages:
    • In a large skillet over medium heat, add 1 tbsp olive oil.
    • Add the sausage links and cook until browned on all sides (about 7–8 minutes). They don’t need to be fully cooked yet.
    • Remove and set aside.
  2. Sauté the Peppers and Onions:
    • In the same skillet, add another tbsp olive oil.
    • Add the sliced onions and peppers. Cook for 5–7 minutes until softened.
    • Add the garlic, oregano, basil, salt, and pepper. Cook for 1 minute more.
  3. Simmer Together:
    • Slice the sausages into 1-inch pieces (or keep whole if you prefer) and return to the skillet.
    • Add 1/4 cup of water or broth.
    • Cover and simmer on low for 10–12 minutes, until sausages are fully cooked and flavors meld.
  4. Serve It Up:
    • Serve over hoagie rolls, pasta, rice, or even on its own.
    • Optional: top with melted provolone or mozzarella if making sandwiches.

Tips & Variations:

  • Want it saucier? Add 1/2 cup of marinara sauce while simmering.
  • Doing it for a crowd? Bake it in the oven: layer browned sausages, sautĂ©ed peppers/onions, and a bit of sauce in a baking dish. Cover and bake at 375°F (190°C) for 25–30 minutes.
  • Works great with chicken sausage or plant-based sausage too!
