✅ Ingredients

For the Peanut Butter Filling:

  • 1/2 cup natural peanut butter (creamy or crunchy)
  • 1/4 cup protein powder (vanilla or chocolate works well)
  • 1–2 tbsp maple syrup or honey (adjust to taste)
  • 1 tbsp coconut flour or oat flour (to help firm the texture, optional)
  • Pinch of salt (omit if your peanut butter is salted)

For the Chocolate Coating:

  • 1/2 cup dark chocolate chips or chopped dark chocolate (at least 70% cocoa)
  • 1 tsp coconut oil (for smooth melting)

🧁 Optional Add-Ins (to boost nutrition or flavor):

  • 1 tbsp ground flaxseed or chia seeds (extra fiber/protein)
  • 1 tsp vanilla extract
  • Crushed peanuts or a sprinkle of sea salt for topping

🍫 Instructions

1. Make the Filling

  • In a bowl, mix together the peanut butter, protein powder, sweetener, and coconut flour until you get a thick, dough-like texture.
  • If it’s too dry, add a splash of almond milk or more peanut butter. If too wet, add a bit more protein powder or coconut flour.

2. Form the Cups

  • Line a mini muffin tin with liners (or use a silicone mold).
  • Melt half the chocolate with 1/2 tsp coconut oil (use microwave or double boiler).
  • Spoon about 1 tsp of melted chocolate into each cup and spread to coat the bottom.
  • Freeze for 10–15 minutes to set.

3. Add the Filling

  • Once the chocolate base is set, press about 1 tbsp of the peanut butter mixture on top of the chocolate in each cup.

4. Top with More Chocolate

  • Melt the remaining chocolate and coconut oil, then pour over the peanut butter layer to cover it completely.
  • Tap the tray gently to level the chocolate and remove air bubbles.
  • Add optional toppings like flaky sea salt or crushed nuts.

5. Chill

  • Refrigerate or freeze until fully set (about 30 minutes).

  • Store in the fridge for up to 1 week, or in the freezer for up to 2 months. Best eaten chilled.
