Doritos Taco Sala

Ingredients:

  • 1 lb extra-lean ground beef (or ground turkey for fewer points)
  • 1 packet taco seasoning (low sodium if possible)
  • 8 cups chopped romaine lettuce (or mixed greens)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced, optional)
  • ½ cup onion (chopped)
  • ½ cup reduced-fat shredded cheddar cheese
  • 1 cup black beans (rinsed & drained, optional)
  • 1 cup corn (frozen or canned, optional)
  • 1 cup salsa (for dressing)
  • ½ cup light sour cream or plain nonfat Greek yogurt
  • 2 cups Doritos (Nacho Cheese or Cool Ranch, lightly crushed)

👩‍🍳 Instructions:

  1. Cook meat: In a skillet, brown ground beef or turkey. Drain any fat. Add taco seasoning + ¼ cup water. Simmer until thickened. Let cool slightly.
  2. Mix base: In a large salad bowl, add lettuce, tomatoes, cucumber, onions, beans, corn, and cheese.
  3. Make dressing: Stir salsa + light sour cream (or Greek yogurt) together for a creamy taco dressing.
  4. Assemble salad: Add the cooked taco meat to the salad bowl and toss gently.
  5. Finish: Just before serving, sprinkle crushed Doritos on top (so they stay crunchy).
  6. Serve immediately with the creamy salsa dressing.

Tips:

  • For fewer points → use baked Doritos or measure out just 2–3 chips per serving and crush them.
  • Swap beef for ground chicken or turkey breast to make it even lighter.
  • Add jalapeños or hot sauce for an extra kick.
