- 8 cups chopped romaine lettuce (or mixed greens)
- 1 cup cherry tomatoes (halved)
- 1 cup cucumber (diced, optional)
- ½ cup onion (chopped)
- ½ cup reduced-fat shredded cheddar cheese
- 1 cup black beans (rinsed & drained, optional)
- 1 cup corn (frozen or canned, optional)
- 1 cup salsa (for dressing)
- ½ cup light sour cream or plain nonfat Greek yogurt
- 2 cups Doritos (Nacho Cheese or Cool Ranch, lightly crushed)

- Cook meat: In a skillet, brown ground beef or turkey. Drain any fat. Add taco seasoning + ¼ cup water. Simmer until thickened. Let cool slightly.
- Mix base: In a large salad bowl, add lettuce, tomatoes, cucumber, onions, beans, corn, and cheese.
- Make dressing: Stir salsa + light sour cream (or Greek yogurt) together for a creamy taco dressing.
- Assemble salad: Add the cooked taco meat to the salad bowl and toss gently.
- Finish: Just before serving, sprinkle crushed Doritos on top (so they stay crunchy).
- Serve immediately with the creamy salsa dressing.
