๐ Ingredients
Marinade:
- ๐ฅฉ 500g lean steak strips (e.g., flank, rump, or sirloin)
- ๐ฅ 1 tbsp light soy sauce
- ๐ Freshly ground black pepper, to taste
- ๐ง (Optional: 1 tsp cornstarch โ helps keep beef tender)
Stir-Fry Sauce:
- ๐ฅข 3 tbsp hoisin sauce
- ๐ฅ 1 tbsp light soy sauce
- ๐ฅ 1 tbsp oyster sauce (optional but adds richness)
- ๐ถ๏ธ 1 tsp chili garlic sauce or sriracha (optional for heat)
- ๐ถ 1 tsp sesame oil
- ๐ง 2โ3 tbsp water, to thin the sauce if needed
Noodles & Stir-fry:
- ๐ 250g noodles (egg noodles, udon, or rice noodles)
- ๐ง 2 spring onions, sliced
- ๐ซ 1 bell pepper, thinly sliced
- ๐ฅ 1 carrot, julienned or thinly sliced
- ๐ง 2 garlic cloves, minced
- ๐งโ๐พ Optional: Broccoli, snap peas, mushrooms, or pak choi
- ๐ข๏ธ 2 tbsp neutral oil (e.g., vegetable or canola)
๐จโ๐ณ Instructions
1. Marinate the Beef:
- In a bowl, combine beef strips with 1 tbsp soy sauce and black pepper.
- Optional: add 1 tsp cornstarch for extra tenderness.
- Let it sit while you prep everything else (10โ15 minutes).
2. Prep the Sauce & Noodles:
- In a small bowl, mix all the sauce ingredients: hoisin, soy, oyster sauce, chili garlic sauce (if using), sesame oil, and a little water.
- Cook the noodles according to package directions. Drain, rinse, and toss with a bit of oil to prevent sticking.
3. Stir-Fry the Beef:
- Heat 1 tbsp oil in a wok or large pan over high heat.
- Sear the beef in batches for 1โ2 minutes per side, until browned and just cooked. Remove and set aside.
4. Cook the Veggies:
- In the same pan, add another 1 tbsp oil.
- Stir-fry the garlic, carrot, bell pepper, and any other veggies for 2โ3 minutes until crisp-tender.
5. Combine Everything:
- Return the beef to the pan.
- Add the noodles and pour in the sauce.
- Toss everything together on medium-high heat until well coated and heated through (about 2โ3 minutes).
6. Finish & Serve:
- Toss in the spring onions just before serving.
- Optional toppings: sesame seeds, chili flakes, fresh coriander, or a drizzle of lime juice.
