🥩🍄 Creamy Beef Stroganoff (Easy One-Pan Recipe)

Ingredients:

For the beef:

  • 1 pound round steak, thinly sliced into strips
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp all-purpose flour
  • 1 tbsp olive oil

For the sauce:

  • 1 tbsp butter
  • 1 small onion, finely chopped
  • 1 cup mushrooms, sliced (optional but classic!)
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • ¾ cup sour cream (or Greek yogurt for lighter option)
  • Salt & pepper to taste
  • Optional: 1 tsp Dijon mustard (adds depth)

To serve:

  • Cooked egg noodles, pasta, mashed potatoes, or rice
  • Fresh parsley (for garnish)

🍳 Instructions:

1. Season & Coat the Beef:

  • In a bowl, mix the steak strips with garlic powder, salt, pepper, and flour until evenly coated.

2. Sear the Beef:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add beef strips in a single layer. Cook for 2–3 minutes per side until browned (work in batches if needed).
  • Remove beef from pan and set aside.

3. Sauté Veggies:

  • In the same pan, melt butter.
  • Add onions (and mushrooms, if using), and cook until softened and golden—about 5–7 minutes.

4. Make the Sauce:

  • Pour in the beef broth and Worcestershire sauce. Stir and bring to a gentle simmer.
  • Reduce heat to low and stir in the sour cream (and Dijon mustard, if using). Don’t boil after adding sour cream or it may curdle.

5. Combine:

  • Return the beef (and any juices) to the pan.
  • Simmer gently for 5 minutes until the beef is cooked through and the sauce thickens slightly.
  • Taste and adjust seasoning.

6. Serve:

  • Spoon the creamy beef stroganoff over your choice of noodles, rice, or mashed potatoes.
  • Garnish with chopped parsley if desired.
