🧁 Ultramel Scones Recipe
Ingredients:
- 7 cups cake flour
- 7 teaspoons baking powder
- 1½ cups sugar
- 4 eggs
- 500 ml (2 cups) Ultramel custard
- 250 g margarine or unsalted butter, softened (about 1 cup)
- 1 teaspoon vanilla essence (optional)
- Pinch of salt
Instructions:
1. Preheat & Prep:
- Preheat your oven to 180°C (350°F).
- Grease a baking tray or line it with baking paper.
2. Mix Dry Ingredients:
- In a large mixing bowl, sift together:
- 7 cups cake flour
- 7 teaspoons baking powder
- Pinch of salt
- Add the sugar and mix well.
3. Rub in the Butter:
- Add the softened butter or margarine.
- Rub it into the flour mixture using your fingertips until it resembles breadcrumbs.
4. Whisk Wet Ingredients:
- In a separate bowl, lightly beat the 4 eggs.
- Mix in the Ultramel custard and vanilla essence (if using).
5. Combine Wet & Dry:
- Pour the wet mixture into the dry ingredients.
- Mix gently until a soft dough forms. Do not overmix — stop once everything is combined.
6. Shape the Scones:
- Lightly flour your hands and working surface.
- Pat the dough out to about 2–3 cm thick.
- Cut into desired shapes using a round cutter or a knife.
7. Bake:
- Place on the tray, leaving space between each scone.
- Brush the tops with a little extra Ultramel or egg for a golden finish.
- Bake for 20–25 minutes, or until risen and golden brown.
