Ingredients (makes about 10–12 crepes):

  • 1 cup (125g) all-purpose flour
  • 2 large eggs
  • 1 Β½ cups (360ml) milk
  • 2 tablespoons butter, melted (plus more for the pan)
  • 1 tablespoon sugar (optional, for sweet crepes)
  • Β½ teaspoon salt
  • 1 teaspoon vanilla extract (optional, for sweet crepes)

Instructions:

  1. Make the batter:
    • In a bowl or blender, combine flour, eggs, milk, melted butter, salt, and optional sugar and vanilla.
    • Blend or whisk until smooth (no lumps).
    • Let the batter rest for 15–30 minutes (optional but improves texture).
  2. Heat the pan:
    • Use a non-stick skillet or crepe pan (8–10 inches).
    • Lightly grease with butter or oil over medium heat.
  3. Cook the crepes:
    • Pour about ΒΌ cup of batter into the center of the pan.
    • Quickly swirl the pan to spread the batter thinly.
    • Cook for 1–2 minutes, or until the edges lift and the bottom is golden.
    • Flip and cook another 30 seconds to 1 minute.
  4. Serve:
    • Stack crepes on a plate and keep warm.
    • Fill with anything you like: Nutella, jam, fruit, whipped cream, cheese, ham, eggs, etc.
