π₯ Basic Crepes Recipe
Ingredients (makes about 10β12 crepes):
- 1 cup (125g) all-purpose flour
- 2 large eggs
- 1 Β½ cups (360ml) milk
- 2 tablespoons butter, melted (plus more for the pan)
- 1 tablespoon sugar (optional, for sweet crepes)
- Β½ teaspoon salt
- 1 teaspoon vanilla extract (optional, for sweet crepes)
Instructions:
- Make the batter:
- In a bowl or blender, combine flour, eggs, milk, melted butter, salt, and optional sugar and vanilla.
- Blend or whisk until smooth (no lumps).
- Let the batter rest for 15β30 minutes (optional but improves texture).
- Heat the pan:
- Use a non-stick skillet or crepe pan (8β10 inches).
- Lightly grease with butter or oil over medium heat.
- Cook the crepes:
- Pour about ΒΌ cup of batter into the center of the pan.
- Quickly swirl the pan to spread the batter thinly.
- Cook for 1β2 minutes, or until the edges lift and the bottom is golden.
- Flip and cook another 30 seconds to 1 minute.
- Serve:
- Stack crepes on a plate and keep warm.
- Fill with anything you like: Nutella, jam, fruit, whipped cream, cheese, ham, eggs, etc.
