Blackened Fish Fillets
Ingredients:
4 white fish fillets (catfish, tilapia, cod, or haddock)
2 tbsp olive oil or melted butter
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
1 tsp dried oregano
½ tsp cayenne pepper (adjust for heat)
½ tsp salt
½ tsp black pepper
Lemon wedges (for serving)
Fresh parsley (optional, for garnish)
Instructions:
Prepare the Seasoning Mix:
In a small bowl, mix together paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
Prep the Fish:
Pat the fish fillets dry with paper towels.
Brush both sides with olive oil or melted butter.
Season the Fish:
Sprinkle the seasoning mix evenly over both sides of each fillet. Press it in gently so it sticks.
Cook the Fish:
Heat a large cast-iron skillet or nonstick pan over medium-high heat until very hot.
Add a small amount of oil to the pan.
Cook the fish fillets for about 3–4 minutes on each side, or until blackened and cooked through.
Serve:
Serve hot with lemon wedges and garnish with chopped fresh parsley.
