  • 1/4 cup maple syrup (or agave)
  • 1/4 cup vegan protein powder (vanilla or unflavored)
  • 1–2 tbsp plant-based milk (only if needed to help bind)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional add-ins:
    • 2 tbsp mini vegan chocolate chips
    • 1 tbsp ground flaxseed or chia seeds
    • 1 tbsp shredded coconut

  1. Mix dry ingredients: In a large bowl, combine oats, protein powder, salt, and any dry add-ins (like flaxseed or coconut).
  2. Add wet ingredients: Add peanut butter, maple syrup, and vanilla extract. Stir until a dough forms. If it’s too dry, add plant milk 1 tsp at a time.
  3. Fold in extras: If using chocolate chips or other extras, fold them in last.
  4. Shape into balls: Scoop about 1 tbsp of the mixture and roll into balls using your hands.
  5. Chill: Place in an airtight container and refrigerate for at least 30 minutes to firm up.
