π₯ Vegan Peanut Butter Oatmeal Protein Balls
β Ingredients (makes ~12 balls)
- 1 cup rolled oats (gluten-free if needed)
- 1/2 cup natural peanut butter (smooth or crunchy)
- 1/4 cup maple syrup (or agave)
- 1/4 cup vegan protein powder (vanilla or unflavored)
- 1β2 tbsp plant-based milk (only if needed to help bind)
- 1 tsp vanilla extract
- Pinch of salt
- Optional add-ins:
- 2 tbsp mini vegan chocolate chips
- 1 tbsp ground flaxseed or chia seeds
- 1 tbsp shredded coconut
π₯£ Instructions
- Mix dry ingredients: In a large bowl, combine oats, protein powder, salt, and any dry add-ins (like flaxseed or coconut).
- Add wet ingredients: Add peanut butter, maple syrup, and vanilla extract. Stir until a dough forms. If itβs too dry, add plant milk 1 tsp at a time.
- Fold in extras: If using chocolate chips or other extras, fold them in last.
- Shape into balls: Scoop about 1 tbsp of the mixture and roll into balls using your hands.
- Chill: Place in an airtight container and refrigerate for at least 30 minutes to firm up.
