🍫 Easy Vegan Fudge
Yields: About 16 small squares
Prep time: 10 min | Chill time: 2+ hours
Ingredients
- 1 cup vegan dark chocolate chips or chopped vegan chocolate
- 1/2 cup full-fat canned coconut milk (well stirred)
- 2 tbsp maple syrup or agave
- 1 tsp vanilla extract
- Pinch of salt
- Optional mix-ins: chopped nuts, shredded coconut, sea salt flakes
Instructions
- Melt chocolate:
In a heatproof bowl, combine chocolate chips and coconut milk. Set over a pot of simmering water (double boiler) or microwave in short bursts, stirring until smooth. - Add sweetener and vanilla:
Stir in maple syrup, vanilla, and a pinch of salt until fully incorporated. - Add mix-ins:
Fold in any nuts, coconut, or sea salt flakes if using. - Pour & chill:
Pour mixture into a small lined dish (8×8 inch or smaller). Smooth the top. - Refrigerate:
Chill for at least 2 hours until firm. - Cut & serve:
Remove from dish, cut into squares, and enjoy!
