Keto Farmers casserole

Ingredients
- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 1 cup bell peppers, chopped (any color)
- 1½ cups cooked breakfast sausage or diced ham (low-carb)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 8 large eggs
- ¾ cup heavy cream (or unsweetened almond milk)
- ½ tsp garlic powder
- Salt & pepper to taste
- Optional: ½ cup cooked spinach or riced cauliflower for added veggies
- Optional topping: extra cheese, sliced green onions
🥣 Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13 inch casserole dish.
2. Sauté veggies:
- In a skillet, heat olive oil. Sauté onions and bell peppers until soft (about 4–5 mins). Add spinach or cauliflower if using. Remove from heat.
3. Layer in casserole dish:
- Spread cooked sausage or ham evenly across the bottom.
- Add sautéed veggies on top.
- Sprinkle shredded cheese evenly over everything.
4. Make egg mixture:
- In a bowl, whisk together eggs, heavy cream, garlic powder, salt, and pepper.
5. Assemble:
- Pour the egg mixture over the meat, veggies, and cheese.
- Top with extra cheese or green onions if desired.
6. Bake:
- Bake uncovered for 35–40 minutes, or until the center is set and top is golden.
- Let cool for 5–10 minutes before slicing.

- Store leftovers in the fridge for 4–5 days.
- Reheat in microwave or oven.
- Great for freezing: slice and wrap individual portions!
💡 Variations:
- Sub sausage with bacon, turkey, or chicken.
- Add herbs like parsley or thyme for flavor.
- Use dairy-free cheese and coconut cream to make it dairy-free.
