Keto Chicken Cheese Bake

Ingredients

  • 2 cups cooked chicken (shredded or cubed)
  • ½ cup cream cheese (softened)
  • ½ cup sour cream or heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella (or your favorite cheese)
  • 2 tbsp grated Parmesan
  • 2 cloves garlic (minced) or ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter (if sautéing garlic)
  • Optional: chopped green onions, jalapeños, or spinach for flavor/texture

🥣 Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a baking dish (8×8 or similar).

2. Sauté garlic (optional):

  • In a skillet, heat olive oil or butter and lightly sauté the garlic until fragrant (about 1 minute). Skip this step if using garlic powder.

3. Mix the base:

  • In a large bowl, combine cream cheese, sour cream (or heavy cream), garlic, onion powder, salt, pepper, and half of the cheddar cheese. Mix until smooth.

4. Add chicken:

  • Stir in the cooked chicken until well coated with the cheesy mixture.

5. Assemble:

  • Transfer mixture to the greased baking dish.
  • Top with remaining cheddar, mozzarella, and Parmesan.

6. Bake:

  • Bake for 20–25 minutes until bubbly and golden on top.
  • Optionally broil for 1–2 minutes to brown the cheese layer.

7. Serve hot:

  • Garnish with chopped green onions or parsley if desired.

💡 Tips:

  • Add steamed broccoli or cauliflower to make it a full meal.
  • Make individual portions in ramekins for meal prep!
  • Store leftovers in fridge for up to 4 days — reheat in microwave or oven.
