Keto chicken Caesar Salad Tacos

Ingredients
For the taco “shells”:
- 4 large romaine lettuce leaves (or use low-carb tortillas if preferred)
For the filling:
- 2 cups cooked chicken (grilled, shredded, or rotisserie)
- ¼ cup Caesar dressing (sugar-free)
- ¼ cup grated Parmesan cheese
- 1 cup chopped romaine or iceberg (optional, for extra crunch)
- Salt & pepper to taste
- 1 tbsp olive oil or butter (if cooking fresh chicken)
- Optional: crumbled bacon, cherry tomatoes, avocado slices
🥣 Instructions
1. Cook or prep your chicken:
- If using raw chicken, season with salt & pepper and cook in olive oil until golden and cooked through. Let rest and slice or shred.
- Or just use shredded rotisserie chicken to save time.
2. Make Caesar chicken filling:
- In a bowl, mix the cooked chicken with Caesar dressing, Parmesan, and a bit of chopped romaine (optional).
- Add salt & pepper to taste.
3. Assemble the tacos:
- Lay out the romaine lettuce leaves like taco shells.
- Spoon the Caesar chicken filling into each leaf.
- Top with extra Parmesan, optional bacon bits, and sliced cherry tomatoes or avocado.
4. Serve immediately:
- Eat fresh and crisp! These don’t store well once assembled, so build just before eating.
💡 Optional Add-ons:
- Keto croutons (made from almond flour bread)
- Hard-boiled egg slices
- Drizzle a little lemon juice for brightness
