π Ingredients (Serves 4)
- 4β5 ripe tomatoes (heirloom, cherry, grape, or Roma β or a mix)
- 1 small red onion (thinly sliced)
- 1β2 cloves garlic (minced or finely grated)
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar or balsamic vinegar
- 1 tsp honey or maple syrup (optional, to balance acidity)
- Salt and black pepper to taste
- Β½ tsp dried oregano or Italian seasoning
- Fresh basil leaves (a handful, torn)
- Optional: crumbled feta or fresh mozzarella balls
- Optional: sliced cucumbers or olives for variation

- Prep the Tomatoes:
Wash and slice tomatoes (if using cherry or grape tomatoes, cut them in half). Place in a large bowl. - Add Aromatics:
Add sliced red onion and minced garlic to the tomatoes. - Mix the Dressing:
In a small bowl, whisk together olive oil, vinegar, honey (if using), salt, pepper, and oregano. - Combine:
Pour the dressing over the tomatoes and gently toss to coat. Let it sit for 10β15 minutes at room temperature to allow flavors to meld. - Finish:
Top with torn basil and optional cheese or add-ins. Taste and adjust salt or acidity if needed.
