🥗 Grilled Chicken Avocado Salad

Ingredients (2 servings)

For the Salad:

  • 2 grilled chicken breasts (sliced)
  • 1 ripe avocado (sliced)
  • 4 cups mixed greens (e.g., spinach, arugula, romaine)
  • 1 cup cherry tomatoes (halved)
  • ½ cucumber (sliced)
  • ¼ red onion (thinly sliced)
  • 2 tablespoons crumbled feta or goat cheese (optional)
  • 1 tablespoon sunflower seeds or chopped almonds (optional for crunch)

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice or balsamic vinegar
  • 1 teaspoon Dijon mustard
  • Salt & pepper to taste
  • ½ teaspoon garlic powder or 1 small garlic clove (minced)

Instructions

  1. Grill the Chicken:
    Season chicken breasts with salt, pepper, garlic powder, and a bit of olive oil. Grill or pan-sear over medium heat for 5–6 minutes per side until cooked through. Let rest, then slice.
  2. Assemble the Salad:
    In a large bowl or two plates, layer mixed greens, tomatoes, cucumber, red onion, avocado slices, cheese (if using), and seeds/nuts.
  3. Make the Dressing:
    Whisk together olive oil, lemon juice (or vinegar), Dijon mustard, garlic, salt, and pepper until emulsified.
  4. Combine:
    Top the salad with sliced grilled chicken and drizzle with the dressing. Toss gently to coat or serve with dressing on the side.
