Keto Garlic Rolls

Ingredients

Dough:

  • 1 1/2 cups shredded low-moisture mozzarella cheese
  • 2 oz cream cheese (about 4 Tbsp)
  • 1 large egg
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Garlic Butter Topping:

  • 3 Tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 Tbsp chopped fresh parsley (optional)
  • 2 Tbsp grated Parmesan cheese

🍯 Instructions

1️⃣ Preheat Oven

  • Preheat to 375°F (190°C).
  • Line a baking sheet with parchment paper.

2️⃣ Melt Cheese

  • In a microwave-safe bowl, add mozzarella and cream cheese.
  • Microwave 1 minute, stir, then microwave another 20–30 seconds until melted and smooth.
  • Stir until fully combined.

3️⃣ Make Dough

  • In a separate bowl, mix:
    • Almond flour
    • Baking powder
    • Garlic powder
    • Salt
  • Add the melted cheese mixture and egg.
  • Mix well with a spatula or your hands (lightly oil your hands if sticky) until a dough forms.

4️⃣ Shape Rolls

  • Divide dough into 8 equal portions.
  • Roll each into a ball and place on the prepared baking sheet.

5️⃣ Bake

  • Bake 15–18 minutes, until golden and puffed.

6️⃣ Prepare Garlic Butter

  • While rolls bake, combine:
    • Melted butter
    • Minced garlic
    • Chopped parsley

7️⃣ Brush & Finish

  • Remove rolls from oven.
  • Immediately brush generously with garlic butter.
  • Sprinkle with grated Parmesan.

8️⃣ Serve

Enjoy warm! Perfect with keto soup, salad, or as a side.


🌿 Storage

  • Store in an airtight container in the fridge up to 4 days.
  • Reheat in oven or air fryer before serving.

💡 Tips & Variations:
Cheesy Rolls: Add extra shredded mozzarella inside each ball before baking.
Herb Rolls: Mix Italian seasoning into the dough.
No microwave? Melt cheese in a saucepan over low heat, stirring often.
