Ground Beef Skillet

Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth (or water with bouillon)
  • 1 cup uncooked pasta (elbow macaroni or small shells work well)
  • 1 tsp chili powder (optional)
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • Optional: chopped parsley or green onions for garnish

Instructions:

  1. Brown the Beef:
    • In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  2. Sauté Veggies:
    • Add diced onion, garlic, and bell pepper to the skillet. Cook for 3–5 minutes until softened.
  3. Add Liquids & Seasoning:
    • Stir in diced tomatoes (with juice), beef broth, uncooked pasta, chili powder, paprika, salt, and pepper.
  4. Simmer:
    • Bring the mixture to a boil. Reduce heat, cover, and simmer for 12–15 minutes, or until pasta is cooked through. Stir occasionally.
  5. Add Cheese:
    • Once pasta is tender and most of the liquid is absorbed, sprinkle cheese over the top. Cover and let melt for 2–3 minutes.
  6. Garnish & Serve:
    • Top with chopped parsley or green onions if desired. Serve hot!
