Flourless Oat and Chia Bread

Ingredients:

2 cups rolled oats

3 tablespoons chia seeds

4 large eggs

1/2 cup plain yogurt (or Greek yogurt)

1 teaspoon baking powder

1/2 teaspoon salt

Optional: herbs or spices to taste (e.g., rosemary, garlic powder)

Preparation:

Preheat the oven to 180°C (350°F). Line a loaf pan with parchment paper or lightly grease it.

Prepare the chia gel: In a small bowl, mix the chia seeds with 6 tablespoons of water and let it sit for about 10 minutes until it forms a gel-like consistency.

Blend the oats: Place the rolled oats in a blender or food processor and pulse until they become a fine oat flour.

Mix the batter: In a large bowl, combine the oat flour, baking powder, and salt. Add the eggs, yogurt, and the chia gel. Mix well until all ingredients are fully incorporated. If you want, add herbs or spices at this point.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 30-40 minutes or until a toothpick inserted into the center comes out clean and the bread is golden on top.

Cool the bread on a wire rack before slicing.
