  • 2 eggs

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin or spray with nonstick spray.
  2. Mix wet ingredients:
    In a bowl, whisk together yogurt, eggs, lemon juice, lemon zest, and vanilla.
  3. Add dry ingredients:
    Stir in sweetener and self-rising flour. Mix until just combined — do not overmix.

  4. Fill muffin cups:
    Divide batter evenly into 12 cups (they’ll be about ¾ full).
  5. Bake:
    Bake for 18–22 minutes, or until a toothpick comes out clean.
