- 2 eggs
- ¼ cup fresh lemon juice

- Mix wet ingredients:
In a bowl, whisk together yogurt, eggs, lemon juice, lemon zest, and vanilla. - Add dry ingredients:
Stir in sweetener and self-rising flour. Mix until just combined — do not overmix.
