Chicken and Mushroom Skillet recipe in a Creamy Asiago and Mustard Sauce:

Ingredients:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups mixed mushrooms (button, cremini, shiitake), sliced

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup dry white wine (optional)

1 cup heavy cream

1/4 cup Asiago cheese, grated

2 tsp Dijon mustard

1 tsp whole-grain mustard

Salt and pepper, to taste

Fresh parsley or thyme, chopped (for garnish)

Freshly ground black pepper, for serving

Instructions:

Prepare the Chicken:

Season the chicken pieces with salt and pepper.

Sear the Chicken:

In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté the Vegetables:

In the same skillet, reduce the heat to medium. Add the chopped onion and cook until softened, about 3-4 minutes. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes. Add the minced garlic and cook for another minute.

Deglaze (optional):

If using white wine, add it to the skillet and cook until the liquid is almost completely reduced, scraping up any browned bits from the bottom of the pan.

Make the Sauce:

Reduce the heat to low. Stir in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes until slightly thickened. Add the grated Asiago cheese and stir until melted and smooth. Mix in the Dijon and whole-grain mustard. Season the sauce with salt and pepper to taste.

Combine and Serve:

Return the cooked chicken to the skillet and toss to coat with the creamy sauce. Cook for an additional 1-2 minutes to heat through. Garnish with chopped parsley or thyme and serve hot.

Tips:

For a richer sauce, you can add a tablespoon of butter along with the cream.

Adjust the amount of mustard to your taste. If you prefer a stronger mustard flavor, add more whole-grain mustard.

Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
