Baked Eggs with Ham and Cheese
Ingredients:
4 large eggs
½ cup shredded cheddar or Swiss cheese
2 tablespoons milk or cream
1 tablespoon chopped chives or green onions (optional)
Salt and black pepper to taste
Butter or non-stick spray for greasing
Directions:
Preheat oven to 375°F (190°C). Lightly grease 4 small ramekins or a muffin tin with butter or spray.
Evenly divide the diced ham between the ramekins.
Crack one egg into each ramekin, right on top of the ham.
Drizzle about ½ tablespoon of milk or cream over each egg.
Sprinkle cheese over the top, and season with salt and pepper. Add chives if using.
Place ramekins on a baking sheet and bake for 12–15 minutes, or until the egg whites are set but yolks are still soft (bake longer if you prefer firmer yolks).
Let cool slightly and serve with toast or a fresh salad.
