Keto Pumpkin Cheese Bal

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup canned pumpkin puree (unsweetened)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 tsp pumpkin pie spice (or cinnamon + nutmeg mix)
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1 tbsp fresh chives or parsley, chopped (optional, for garnish)

Instructions:

  1. In a mixing bowl, combine softened cream cheese and pumpkin puree. Mix until smooth.
  2. Add shredded cheese, pumpkin pie spice, garlic powder, and salt. Mix well until fully combined.
  3. Stir in chopped nuts if using.
  4. Shape the mixture into a ball (use plastic wrap or parchment paper to help shape).
  5. Chill in the fridge for at least 1 hour to firm up.
  6. Before serving, sprinkle with extra chopped nuts or fresh herbs if desired.
  7. Serve with keto-friendly crackers, celery sticks, or cucumber slices.

Tips:

  • You can swap cheddar for gouda or mozzarella for a different flavor.
  • If you want it spicier, add a pinch of cayenne or smoked paprika.
