Keto Pumpkin Cheese Bal

Ingredients:
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1/2 cup canned pumpkin puree (unsweetened)
- 1/4 cup chopped pecans or walnuts (optional)
- 1 tsp pumpkin pie spice (or cinnamon + nutmeg mix)
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1 tbsp fresh chives or parsley, chopped (optional, for garnish)
Instructions:
- In a mixing bowl, combine softened cream cheese and pumpkin puree. Mix until smooth.
- Add shredded cheese, pumpkin pie spice, garlic powder, and salt. Mix well until fully combined.
- Stir in chopped nuts if using.
- Shape the mixture into a ball (use plastic wrap or parchment paper to help shape).
- Chill in the fridge for at least 1 hour to firm up.
- Before serving, sprinkle with extra chopped nuts or fresh herbs if desired.
- Serve with keto-friendly crackers, celery sticks, or cucumber slices.
Tips:
- You can swap cheddar for gouda or mozzarella for a different flavor.
- If you want it spicier, add a pinch of cayenne or smoked paprika.
