Keto Salmon Cakes

Ingredients:
- 1 can (14 oz) salmon, drained and flaked (or cooked fresh salmon, about 1 cup flaked)
- 1 large egg
- 2 tbsp almond flour (or coconut flour)
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- 1 small garlic clove, minced
- 2 green onions, finely chopped
- Salt and pepper to taste
- 2 tbsp olive oil or avocado oil (for frying)
- Optional: a squeeze of lemon juice
Instructions:
- In a mixing bowl, combine the flaked salmon, egg, almond flour, mayonnaise, mustard, dill, garlic, and green onions. Mix well.
- Season with salt and pepper to your taste. If you want a little zing, add a squeeze of lemon juice.
- Form the mixture into 4 small patties.
- Heat the oil in a skillet over medium heat.
- Cook the salmon cakes for about 3-4 minutes on each side until golden brown and cooked through.
- Remove from the skillet and place on paper towels to drain excess oil.
- Serve hot with a side of keto-friendly sauce like sour cream mixed with lemon and dill or a simple avocado mayo.
