Weight Watcher Chicken Soup.

Ingredients:
- 2 tsp olive oil (or cooking spray for 0 points)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- Salt to taste
- 6 cups low-sodium chicken broth
- 2 cups cooked, shredded skinless chicken breast
- 1.5 cups chopped spinach or kale (optional)
- Juice of 1/2 lemon (optional, for brightness)
🍲 Instructions:
- Sauté veggies:
In a large pot, heat olive oil (or spray with cooking spray). Sauté onion, garlic, carrots, and celery for 5–6 minutes until softened. - Add seasonings:
Stir in thyme, parsley, pepper, and a pinch of salt. Cook for 1 more minute. - Pour broth:
Add chicken broth and bring to a gentle boil. - Simmer:
Lower heat and let it simmer for 15–20 minutes, until vegetables are tender. - Add chicken & greens:
Stir in the cooked shredded chicken and spinach/kale. Simmer another 5 minutes. - Finish with lemon:
Add a squeeze of lemon juice if desired. Taste and adjust seasoning.
🍽️ Tips & Variations:
- Use rotisserie chicken breast for ease (remove skin for lower points).
- Add zucchini noodles or cauliflower rice for more volume.
- Want it creamy? Add a spoon of low-fat plain Greek yogurt after it cools slightly (1 extra point max).
