Add lentils & sweet potato: Add diced sweet potato and lentils. Stir to coat in the spices.
Pour broth & simmer: Add vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes or until lentils are soft and sweet potato is tender. Stir occasionally. Add a bit more water if it thickens too much.
Adjust seasoning: Taste and add salt or more spice if needed.
Serve: Spoon into bowls, garnish with chopped coriander and a squeeze of lemon juice.
