Baked Cottage Cheese Eggs

Ingredients:

  • 3 large eggs
  • ½ cup cottage cheese (full fat or low fat)
  • Salt and pepper to taste
  • ¼ tsp garlic powder (optional)
  • ¼ tsp chili flakes or paprika (optional)
  • 1 tbsp chopped fresh herbs (like parsley or chives – optional)
  • A little butter or oil for greasing

Optional Add-ins:

  • Chopped spinach
  • Bell peppers
  • Grated cheese on top
  • Cooked chicken or turkey bits

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. Grease a small baking dish or ramekins with butter or oil.
  3. In a bowl, whisk together eggs, cottage cheese, salt, pepper, and any optional spices/herbs.
  4. Pour the mixture into the baking dish.
  5. Bake for 20–25 minutes or until the eggs are set and lightly golden on top.
  6. Let cool slightly and serve warm.
