2 cups cauliflower rice (fresh or frozen, cooked and squeezed dry)
2 eggs
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
½ tsp garlic powder
½ tsp onion powder
½ tsp baking powder
Salt & pepper to taste
Optional: chopped parsley or Italian seasoning for extra flavor
🍞 Instructions:
Preheat oven to 375°F (190°C). Line a baking tray with parchment paper.
Prep Cauliflower: If using fresh, pulse cauliflower in a food processor to rice it. Microwave for 4-5 minutes, then place it in a clean towel and squeeze out as much moisture as possible.
Mix: In a bowl, combine cauliflower rice, eggs, cheeses, seasonings, and baking powder. Mix into a thick dough.
Shape: Spread the mixture onto the tray in a rectangle or loaf shape (½ inch thick).
Bake: Bake for 20-25 minutes until golden brown and firm.
Optional: For crispier top, broil for 2-3 minutes at the end.
Cool & Slice: Let cool slightly before slicing into bread pieces.
