Keto Peanut Butter Protein Bombs

Ingredients:

  • 1 cup natural peanut butter (unsweetened, smooth or crunchy)
  • 1/2 cup almond flour
  • 1/4 cup vanilla or chocolate whey protein powder (low-carb/keto-friendly)
  • 2 tbsp coconut oil (melted)
  • 2–3 tbsp powdered erythritol or monk fruit sweetener (adjust to taste)
  • 1/2 tsp vanilla extract
  • A pinch of salt
  • Optional: sugar-free chocolate chips or chopped peanuts for topping

👩‍🍳 Instructions:

  1. Mix it all up:
    In a bowl, combine peanut butter, almond flour, protein powder, coconut oil, sweetener, vanilla, and salt. Mix until a dough-like consistency forms.
  2. Shape into bombs:
    Roll into small bite-sized balls (about 1 inch). You can also press into silicone molds.
  3. Top it off (optional):
    Sprinkle with sugar-free chocolate chips or chopped nuts if using.
  4. Chill:
    Place in the fridge or freezer for at least 30 minutes to set.
  5. Store:
    Keep refrigerated in an airtight container for up to a week, or freeze for longer.
