🌱 Vegan S’mores Cookies

Ingredients:
Dry:
- 1 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup crushed vegan graham crackers (about 4 sheets)
Wet:
- 1/2 cup coconut oil or vegan butter (softened, not melted)
- 1/2 cup brown sugar
- 1/4 cup cane sugar
- 1/4 cup non-dairy milk (almond, soy, or oat)
- 1 tsp vanilla extract
Add-ins:
- 1/2 cup vegan chocolate chips or chunks
- 1/2 cup vegan mini marshmallows (like Dandies or Trader Joe’s brand)
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and crushed graham crackers.
- Mix wet ingredients: In a separate large bowl, cream together softened coconut oil/vegan butter with both sugars until smooth. Add non-dairy milk and vanilla; stir to combine.
- Combine wet and dry ingredients until just mixed. Fold in chocolate chips and mini marshmallows.
- Scoop dough into 1.5 tbsp-sized balls and place them on the baking sheet, leaving some space in between.
- Bake for 10–12 minutes, or until the edges are golden. Let cool on the baking sheet for a few minutes, then transfer to a rack.
