๐ŸŒฑ Vegan S’mores Cookies

Ingredients:

Dry:

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup crushed vegan graham crackers (about 4 sheets)

Wet:

  • 1/2 cup coconut oil or vegan butter (softened, not melted)
  • 1/2 cup brown sugar
  • 1/4 cup cane sugar
  • 1/4 cup non-dairy milk (almond, soy, or oat)
  • 1 tsp vanilla extract

Add-ins:

  • 1/2 cup vegan chocolate chips or chunks
  • 1/2 cup vegan mini marshmallows (like Dandies or Trader Joe’s brand)

Instructions:

  1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, salt, and crushed graham crackers.
  3. Mix wet ingredients: In a separate large bowl, cream together softened coconut oil/vegan butter with both sugars until smooth. Add non-dairy milk and vanilla; stir to combine.
  4. Combine wet and dry ingredients until just mixed. Fold in chocolate chips and mini marshmallows.
  5. Scoop dough into 1.5 tbsp-sized balls and place them on the baking sheet, leaving some space in between.
  6. Bake for 10โ€“12 minutes, or until the edges are golden. Let cool on the baking sheet for a few minutes, then transfer to a rack.
