🍞 Air Fryer Bread Pudding

Prep Time: 10 minutes

Cook Time: 20-25 minutes

Servings: 4-6

WW Points: 4–5 per serving (depending on bread and sweetener used)

Ingredients:

  • 3 cups cubed day-old bread (use whole wheat, challah, or brioche for extra flavor)
  • 2 large eggs
  • 1/2 cup unsweetened almond milk (or regular milk)
  • 1/4 cup granulated sweetener (Stevia, monk fruit, or sugar — adjust to taste)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • Pinch of salt
  • 1 tbsp melted butter (optional, for extra richness)
  • 1/4 cup raisins or chocolate chips (optional, for added texture)

Instructions:

  1. Prep the bread:
Cut the bread into cubes, about 1-inch in size. If you’re using fresh bread, toast it lightly to dry it out a bit, which helps it absorb the custard mixture better.
  2. Make the custard:
In a medium bowl, whisk together the eggs, almond milk, sweetener, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Stir until the mixture is smooth and well-combined.
  3. Combine:
Add the cubed bread to the custard mixture, gently folding to ensure all the bread is soaked in the custard. If desired, mix in raisins or chocolate chips for extra flavor.
  4. Preheat the air fryer:
Preheat the air fryer to 350°F (175°C) for 3–5 minutes.
  5. Cook:
Lightly grease the air fryer basket with cooking spray, then transfer the bread pudding mixture into the basket, pressing it down gently. Cook at 350°F (175°C) for 20–25 minutes, or until the pudding is set in the center and golden brown on top. You can check the doneness by inserting a knife or toothpick into the center; it should come out clean when done.
  6. Serve:
Let the bread pudding cool for a few minutes before serving. Top with a drizzle of sugar-free syrup, whipped cream, or fresh berries for an extra treat!

💡 Tips:

  • Bread choices: You can use any type of bread for this recipe, but a richer, more flavorful bread like challah or brioche works wonderfully.
  • Add-ins: Feel free to get creative with add-ins! Chopped apples, pecans, or a sprinkle of brown sugar on top before air frying are all great options.
  • Topping ideas: Top with a light dusting of powdered sugar or a few tablespoons of low-fat vanilla yogurt for a creamy finish.
