Baked Salmon in Foil with Asparagus (Quick & Healthy)

Ingredients (Serves 2-3):
- 2 salmon fillets (about 5-6 oz each)
- 1 bunch asparagus, ends trimmed
- 2 tbsp olive oil or melted butter
- 1 tbsp lemon juice
- 2 garlic cloves, minced
- 1 tsp Italian seasoning (or a mix of oregano, thyme, and basil)
- Salt & pepper to taste
- Lemon slices (optional)
- Foil sheets for wrapping
Instructions:
- Preheat oven to 400°F (200°C).
- Prepare foil packs: Place each salmon fillet in the center of a foil sheet. Divide asparagus evenly and place beside or under the salmon.
- Make the seasoning mix: In a small bowl, mix olive oil (or butter), lemon juice, minced garlic, Italian seasoning, salt, and pepper.
- Drizzle the mixture over the salmon and asparagus. Add lemon slices on top if using.
- Fold the foil into packets, sealing tightly to trap steam.
- Bake for 15–18 minutes (depends on thickness). Open the foil at the end and broil for 2–3 minutes for a slightly crispy top (optional).
- Serve hot — straight from the foil for easy cleanup!
