Baked Salmon in Foil with Asparagus (Quick & Healthy)

Ingredients (Serves 2-3):

  • 2 salmon fillets (about 5-6 oz each)
  • 1 bunch asparagus, ends trimmed
  • 2 tbsp olive oil or melted butter
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning (or a mix of oregano, thyme, and basil)
  • Salt & pepper to taste
  • Lemon slices (optional)
  • Foil sheets for wrapping

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Prepare foil packs: Place each salmon fillet in the center of a foil sheet. Divide asparagus evenly and place beside or under the salmon.
  3. Make the seasoning mix: In a small bowl, mix olive oil (or butter), lemon juice, minced garlic, Italian seasoning, salt, and pepper.
  4. Drizzle the mixture over the salmon and asparagus. Add lemon slices on top if using.
  5. Fold the foil into packets, sealing tightly to trap steam.
  6. Bake for 15–18 minutes (depends on thickness). Open the foil at the end and broil for 2–3 minutes for a slightly crispy top (optional).
  7. Serve hot — straight from the foil for easy cleanup!

  • You can add chili flakes for a little kick.
  • Swap asparagus with zucchini or broccoli for variety.
  • This also works great on a grill!
