Simple Apple Cake

Ingredients:

  • 1 medium green apple (peeled & finely chopped – about 1/2 cup)
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 2 large eggs
  • 1/4 cup butter (melted) or coconut oil
  • 1/4 cup erythritol (or preferred keto sweetener)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat oven to 175°C (350°F). Grease a small cake pan or line it with parchment paper.
  2. In a bowl, whisk together eggs, sweetener, melted butter, and vanilla until smooth.
  3. Add almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt. Mix until a thick batter forms.
  4. Fold in the chopped apples.
  5. Pour batter into the pan, smooth the top, and bake for 25–30 minutes, or until golden and a toothpick comes out clean.
  6. Let it cool, then slice and enjoy!
