Simple Apple Cake

Ingredients:
- 1 medium green apple (peeled & finely chopped – about 1/2 cup)
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 2 large eggs
- 1/4 cup butter (melted) or coconut oil
- 1/4 cup erythritol (or preferred keto sweetener)
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 175°C (350°F). Grease a small cake pan or line it with parchment paper.
- In a bowl, whisk together eggs, sweetener, melted butter, and vanilla until smooth.
- Add almond flour, coconut flour, baking powder, cinnamon, nutmeg, and salt. Mix until a thick batter forms.
- Fold in the chopped apples.
- Pour batter into the pan, smooth the top, and bake for 25–30 minutes, or until golden and a toothpick comes out clean.
- Let it cool, then slice and enjoy!
