Vegan Carrot Cake Energy Balls (6 Ingredients, Gluten-Free)

🧾 Ingredients:


1 cup grated carrots (about 2 medium carrots)

1 cup rolled oats (use certified gluten-free oats)

1/2 cup pitted dates (soaked in warm water for 10 mins if dry)

1/2 cup walnuts (or pecans)

1/2 tsp cinnamon

1/4 tsp salt

Optional add-ins:

1–2 tbsp shredded coconut

1 tbsp chia seeds or flaxseeds

1/2 tsp vanilla extract

Blend oats and nuts in a food processor until finely ground.

Add dates, carrots, cinnamon, and salt to the processor. Blend until a sticky dough forms.

Scrape down sides as needed. If the mixture is too dry, add a teaspoon of water or maple syrup; if too wet, add more oats.

Roll into small balls using your hands (about 1 tbsp each).

Chill in the fridge for 20–30 minutes to firm up.

Store in the fridge (up to 1 week) or freezer (up to 1 month).
