Vegan Crunchy Slaw Recipe

🥕 Ingredients (Serves 2–3)

For the Salad:

  • 1 cup green cabbage, shredded
  • 1 cup red cabbage (optional), shredded
  • 1 medium carrot, grated
  • 1 small red onion, thinly sliced
  • 1 small green bell pepper, julienned (optional)
  • 1 small apple, thinly sliced (optional for sweetness & crunch)

For the Dressing:

  • 2 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar (or lemon juice)
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or agave syrup
  • Salt & pepper to taste

🥣 Instructions

  1. Prep the Veggies: Shred and slice all your salad ingredients and place them in a large bowl.
  2. Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
  3. Combine: Pour the dressing over the veggies and toss until everything is well coated.
  4. Chill & Serve: Let it sit for 10–15 minutes for flavors to meld (optional). Serve cold.
