Weight Watchers Zero point vegetable Soup.

Ingredients:

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 bell pepper (any color), chopped
  • 1 cup green beans, chopped
  • 1 can (14.5 oz) diced tomatoes (no salt added)
  • 4 cups vegetable broth (low sodium)
  • 2 cups cabbage, shredded
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional for extra flavor)
  • Salt & pepper to taste
  • 1 tsp olive oil (optional, but still 0 points if spread across servings)
  • 1 cup baby spinach or kale (added at the end)

Instructions:

  1. Heat a large pot over medium heat. If using oil, add it; otherwise, use a splash of broth. Sauté the onion, garlic, carrots, and celery for 3-4 minutes until slightly softened.
  2. Add the bell pepper, zucchini, and green beans. Cook for another 2 minutes.
  3. Pour in the diced tomatoes and vegetable broth. Stir in cabbage, Italian seasoning, paprika, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes until all the veggies are tender.
  5. Stir in spinach or kale and let it wilt for about 2 minutes. Adjust seasoning if needed.
  6. Serve hot and enjoy!
