1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
2 tablespoons olive oil
4 cloves garlic (minced)
Zest and juice of 1 lemon
1 teaspoon dried oregano
1 teaspoon dried parsley (optional)
Salt and pepper to taste
Fresh lemon wedges for serving
Instructions:
Prep the Chicken: Cut the chicken breasts into bite-sized pieces and set aside.
Make the Marinade: In a bowl, combine olive oil, minced garlic, lemon zest, lemon juice, dried oregano, dried parsley (if using), salt, and pepper. Stir well to combine.
Marinate the Chicken: Add the chicken pieces to the marinade, mixing them so they are fully coated. Let it sit for at least 15-20 minutes (or up to an hour for more flavor).
Cook the Chicken: Heat a large skillet over medium heat. Add the chicken pieces (in batches if necessary) and cook for 6-8 minutes, turning occasionally, until the chicken is golden brown and cooked through.
Serve: Serve the chicken bites with fresh lemon wedges on the side for extra citrus flavor.
Tips:
For added flavor: You can marinate the chicken overnight for an even deeper flavor.
Serving suggestion: Serve with a side of veggies or over a fresh salad for a low-point, filling meal!
