VEGAN BUTTERMILK” FROSTING


Ingredients:
1 cup unsweetened plant-based milk (such as almond milk, soy milk, or oat milk)
1 tablespoon apple cider vinegar or lemon juice
1 cup vegan butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Instructions:
In a small bowl, combine the unsweetened plant-based milk and apple cider vinegar or lemon juice. Stir well and let it sit for 5 minutes to curdle. This will create a vegan “buttermilk” substitute.
In a large mixing bowl, add the softened vegan butter. Using an electric mixer or a stand mixer, cream the butter until it becomes light and fluffy.
Gradually add the powdered sugar, about 1 cup at a time, to the creamed butter, and continue to mix until well combined and smooth.
Add the vanilla extract to the frosting mixture and mix until fully incorporated.
Slowly pour in the curdled plant-based milk mixture to the frosting, and continue to mix on low speed until the frosting reaches the desired consistency. You may need to adjust the amount of milk to achieve the desired thickness or thinness of the frosting.
Once the frosting is smooth and creamy, taste and adjust the sweetness or flavor with more powdered sugar or vanilla extract, if desired.
Use the vegan “buttermilk” frosting to frost your favorite cakes, cupcakes, or other baked goods. Enjoy your delicious vegan treat!
