Vegan Strawberry Mousse

Ingredients

  • 2 cups fresh strawberries (hulled and sliced)
  • 1/2 cup coconut cream (chilled)
  • 3 tbsp maple syrup (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice (optional, enhances flavor)
  • 1/2 tsp agar-agar powder (for a firmer texture)

Instructions

  1. Blend Strawberries: In a blender, puree the strawberries until smooth. Strain if you want a smoother texture.
  2. Heat & Thicken: In a saucepan, combine the strawberry puree, maple syrup, vanilla, and agar-agar. Heat over medium-low, stirring frequently until it simmers. Let it cook for 2 minutes to activate the agar. Remove from heat and let cool slightly.
  3. Whip Coconut Cream: In a chilled bowl, whisk the coconut cream until light and fluffy.
  4. Fold & Chill: Gently fold the strawberry mixture into the whipped coconut cream until well combined. Pour into serving glasses.
  5. Set & Serve: Refrigerate for at least 2 hours (or until set). Garnish with fresh strawberries or mint before serving.
