Charred Cinnamon Pineapple Old Fashioned

Ingredients (per cocktail):

2 oz Bourbon
0.5 oz Pineapple-Infused Simple Syrup (simple syrup + muddled pineapple, strained)
2 dashes Aromatic Bitters
Charred Pineapple Cubes
Smoky Cinnamon Sugar (mix sugar, ground cinnamon, and a pinch of smoked salt) for rim
Cinnamon Stick


Instructions:

Rim the Glass: Moisten rim and dip into smoky cinnamon sugar.
Stir: In a mixing glass with ice, stir bourbon, pineapple syrup, and bitters until chilled.
Strain & Serve: Strain into the cinnamon-sugar-rimmed glass over a large ice cube.
Garnish: Add charred pineapple cubes and place a cinnamon stick on top.
