Air fryer meatloaf
Ingredients:
- 1 lb (450g) ground beef (80/20 for juiciness)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/4 cup finely chopped onion
- 1 clove garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 1/4 cup ketchup (for topping)
- 1 tbsp brown sugar (for topping, optional)
Instructions:
- Prepare the Meatloaf Mix:
- In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix until just combined; avoid overmixing to keep the meatloaf tender.
- Shape the Meatloaf:
- Form the mixture into a loaf shape that fits your air fryer basket or tray. Place it on a piece of parchment paper for easy transfer and cleanup.
- Preheat the Air Fryer:
- Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
- Cook the Meatloaf:
- Place the meatloaf in the air fryer basket or tray. Cook at 375°F (190°C) for 20 minutes.
- Add the Topping:
- While the meatloaf cooks, mix the topping by combining ketchup and brown sugar. After 20 minutes, spread the topping evenly over the meatloaf.
- Finish Cooking:
- Return the meatloaf to the air fryer and cook for an additional 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest and Serve:
- Let the meatloaf rest for 5 minutes before slicing. Serve with your favorite sides like mashed potatoes or roasted vegetables.
