Air Fryer Breakfast Tortilla Bowl
Ingredients:
- 1 large tortilla (8-10 inches)
- 2 large eggs
- 2 tablespoons shredded cheese (cheddar, mozzarella, or your choice)
- 1 slice of cooked bacon, crumbled (or 2 tablespoons of cooked sausage)
- 1 tablespoon diced tomatoes
- 1 tablespoon chopped green onions
- Salt and pepper to taste
- Optional toppings: avocado slices, salsa, or sour cream
Instructions:
- Prepare the tortilla bowl:
- Preheat your air fryer to 350°F (175°C).
- Lightly spray a small oven-safe bowl or ramekin with cooking spray.
- Place the tortilla into the bowl, pressing it gently to form a bowl shape.
- Cook the tortilla:
- Place the bowl with the tortilla into the air fryer basket.
- Air fry for 3-4 minutes, or until the tortilla starts to crisp up slightly.
- Add the filling:
- Crack the eggs into the tortilla bowl and lightly whisk with a fork inside the tortilla.
- Season with salt and pepper.
- Sprinkle the shredded cheese, bacon (or sausage), diced tomatoes, and green onions over the eggs.
- Cook the breakfast bowl:
- Place the filled tortilla bowl back into the air fryer.
- Air fry at 350°F (175°C) for 8-10 minutes, or until the eggs are set and the tortilla is golden and crispy.
- Serve:
- Carefully remove the tortilla bowl from the air fryer.
- Add optional toppings like avocado slices, salsa, or sour cream.
- Serve warm and enjoy!
